Weekend Highlights: Cooking and Planting

These are some highlights from the weekend:

Sprouts on salad with avocado and pepitas.

Sprouts on sandwich with fried egg, provolone, and avocado.  (I want to put avocado and sprouts on pretty much everything.)

We got 5 bags of new soil, and the composting collection guy at the market (begrudgingly) accepted three of the bags we had refilled with old soil.

Saturday’s plantings:  tatsoi, parsnips, spinach, and dino kale. All from Hudson Valley Seed Library.

Experiment: tatsoi in old soil vs. tatsoi in new soil.

The old kale finally decided to flower (after making it through the heat of last summer with no problem)…

but the new sprouts will be ready to take over soon!

Delicious chocolate cake. Icing was a bit hard to spread, but it didn’t affect the taste. The loaf was better than the cupcakes- a bit more dense.

Fluffy biscuits that only took 15 minutes and 5 ingredients. And they are vegan.

Dinner: panko-parmesan crusted chicken, biscuits, green beans.

Whole-wheat and oatmeal pancakes that still have normal, fluffy pancake texture.  Warning: you have to let the batter sit for an hour after mixing…I failed to notice this before I started cooking.

Giant banana chocolate-chip pancake. Most of them had blueberries, but I ran out.

Cooking wild rice for the first time.

Delicious spinach from the market.

Another good dinner: baked grey sole, sauteed spinach with garlic, wild rice. Fish was very good- delicate texture and flavor and super easy to cook. Baked at 350 for 6 minutes with olive oil, salt, and pepper and then topped with lemon.
