Thanksgiving Weekend Selections

It was a long weekend full of delicious meals. I was too busy enjoying the food and company to remember to take pictures of everything, but there are a few selections below.

On Wednesday night I made a butternut squash soup topped with sour cream and fried leeks from a recipe in Cook’s Illustrated. I really liked having the crunch from the fried leeks to add some texture to the meal. On the side I made some peas. I hadn’t made frozen peas in a long time. I’d only ever made them in the microwave, which seemed to result in somewhat mushy, overcooked peas. I saw a recipe that involved cooking them with shallots and garlic in a bit of chicken stock and decided to give it a try. I still managed to overcook them a bit, but they were better, and I’d definitely try it again.

After dinner, we started in on desserts for Thursday’s meal. We were bringing the pumpkin cheesecake featured in a previous post and an apple pie also from Cook’s Illustrated. We prepared the cheesecake and the pie crusts on Wednesday night and then got up early to slice apples on Thursday morning. We were right on track to finish the pie before we needed to leave at 11, until the oven decided to remind us that we hadn’t cleaned it in quite some time…or possibly ever. Luckily it was a beautiful day to sit on the balcony and watch smoke streaming out the back door. We brought the pie uncooked and put it in the oven at Jeremy’s parents’.

We were lucky to have two traditional thanksgiving meals as well as a homemade pizza lunch. All featured abundant and delicious food. I’m thankful that I have so many wonderful people to cook and eat with.
