Summer Cooking

I’ve been doing lots of cooking this week. Here are some pictures, links, and brief reviews.

Monday Breakfast: Zucchini Chocolate Chip Muffins

Good, not great. Freeze well.

Monday Dinner: Corn, Bacon, Avocado, Tomato Salad

Delicious and easy. The corn from the farmers’ market was amazing and the tomatoes were from our garden. Good textural variety.

Wednesday Dinner: Gnocchi with Pesto

The gnocchi took some work (peeling and ricing the hot potatoes takes a while), but they turned out well and were a good excuse to devour some of the pesto.

We have lots of extra gnocchi in the freezer.

Wednesday Dinner Side: Sauteed Zucchini with Lemon and Thyme

This was the first time I’d used lemon with sauteed zucchini, and it was delicious. Also a good use of thyme, which we have a ton of.

Friday: Brioche

Saturday Breakfast: Brioche French Toast

Delicous. Recipe from How to Cook Everything.

Saturday Lunch: Quinoa, Kale, Tomato Salad with Pesto

A simplified version of this recipe. Good use for kale, tomatoes, and pesto from the garden.

Sunday Dessert: Sweet Corn and Black Raspberry Ice Cream

Delicious. Good texture.  The sweet corn ice cream is very sweet and goes nicely with the slightly tangy blackberry/raspberry swirl.
